Breeding Our poultry and lambs are 100% farm-raised. The poulardes de Champagne, capons and lambs have all the makings of tasty meat. Philippe Mille, from Domaine Les Crayères, sources his produce from Julien, Corentine and Patrick Cogniard. Direct sales in the store, at the farm, every afternoon from Tuesday to Friday, from 1:30pm to 5pm, at the Rethel market, under the Place de Caen market hall, on Thursday mornings, and at the Halles du Boulingrin on Friday and Saturday mornings.
