Auffo, Coline Faulquier's future restaurant in Marseille
Coline Faulquier has just taken over l'Épuisette, an iconic Marseille address, which she will open under the name Auffo in April. Here's what's in store.
Coline Faulquier, known for her Signature restaurant in Marseille, is about to write a new chapter in her career by taking over L'Épuisette in Marseille. Renamed Auffo, in homage to the vallon des Auffes, the restaurant will reopen in April 2025. With this new venture, the chef, named Jeune Talent by Gault&Millau in 2017, aims to combine respect for culinary heritage and modernity, while highlighting the riches of the Mediterranean terroir.
Preserving culinary identity
Coline Faulquier intends to perpetuate the gastronomic spirit of the place, while adding her own touch. While the menu has not yet been finalized, it will certainly focus on seafood, in keeping with Signature's style.
On the interior design front, work is underway to modernize the restaurant without altering its soul. An uncluttered space, raw materials and a more intimate dining room will complement the main dining room and its breathtaking sea view. The majority of the Épuisette team is expected to remain in place, despite a few announced departures.
What about the Signature restaurant?
The Signature restaurant will continue to operate until the end of March, but Coline Faulquier is considering selling it. The young woman, very attached to the place that saw her grow up, should try to find a chef to run it in her name, for the time of the sale.
Coline Faulquier is well aware of the expectations surrounding the takeover of this well-known Marseilles address, and is approaching it with determination. " It's an emblematic place, and I want to restore it to its former glory ," she asserts.
