Since February 14, 2025, Les Hautes Roches in Rochecorbon has welcomed a new kitchen duo: chef Benjamin Chrétien and pastry chef Pauline Macé.

Les Hautes Roches opens a new gastronomic chapter with the arrival of Benjamin Chrétien as head chef. at just 27 years of age, this talented chef brings a modern, refined vision while respecting the soul of the establishment.

A new culinary signature

Benjamin Chrétien, whose career has been marked by excellence, is committed to sublimating French culinary traditions with a touch of boldness and elegance. His credo: to revisit the great classics of the terroir, infusing them with subtle creativity, while highlighting exceptional products. To achieve this, he works closely with local producers, in particular his trusted market gardener, guaranteeing a cuisine rooted in seasonality and authenticity.

Fish is one of the highlights of the menu, with particular attention paid to lobster, the chef's signature ingredient. This exceptional crustacean is showcased through daring combinations that awaken the taste buds and invite a unique culinary experience, between respect for gastronomic heritage and contemporary touches.

Pauline Macé in patisserie

Alongside Benjamin Chrétien, pastry chef Pauline Macé completes this gastronomic offering with delicate, gourmet desserts, always in harmony with the seasons. Her approach combines finesse and lightness, perfecting the taste experience for guests.

Les Hautes Roches: a place steeped in history

Anchored in a setting steeped in history, the Domaine des Hautes Roches, France's first troglodytic hotel, bears witness to a rich past. From monastic cells to wine cellars and spirits warehouses, this emblematic site has evolved over the centuries to become a gastronomic landmark.

The gastronomic restaurant welcomes guests from Wednesday to Sunday evenings, as well as Friday, Saturday and Sunday lunchtimes. To complement this, the Hautes Roches bistro, inspired by the elegant winter gardens of the 18th century, is open daily, offering tasty, accessible cuisine in a refined setting.

With this new direction in the kitchen, Hautes Roches promises a renewed culinary experience, where tradition and modernity come together to delight gourmets.
