Prestige Restaurant Sébastien has been Michel's successor for a long time now, but the Bras spirit has never been diluted in this handover, which has taken place so naturally that even the most loyal of customers will not have noticed a thing. Of course, Aubrac is still at the heart of the project for this mythical house, whose immense, superb glass room, bathed by a stream that never fails to enchant even the most jaded of investigators, is entirely turned towards nature, as far as the eye can see. Occasionally, as was the case on our last visit, the fog limits the horizon to fifty meters or so, but we soon forget this minor inconvenience and let ourselves be conquered by the ever-enthusiastic, fragrant, juicy cuisine, which invades you at every moment with its herbaceous scents and intoxicating perfumes. The gargouillou is always there, of course, each time in a new version as the seasons and nature decide on its composition, but each year new dishes are announced, like this immense olive-grilled red mullet, steamed carrots, shellfish consommé, nectavigne and adaliman pepper (a five-toque dish) or the tangy crabmeat, summer fruit mousseux and Lagardelle cabbage leaves. The marinated piece of beef (from Conquet) remains a must: magnificent, melting, animalized, with its clove-grilled bread and green beans, the accompanying truffle aligot is unstoppably delicious, and the cheese platter that follows has few equivalents in France. In such an extraordinary sequence, the desserts are a little behind, as if lacking breath, but the cellar is immense and the service, both young and very elegant, actively contributes to the excellence of the moment.
