Gourmet Restaurant Nicolas Stamm and Serge Schaal of La Fourchette des Ducs d'Obernai are confirming their presence in Strasbourg's gastronomic landscape: following in the footsteps of Léonor, they are now consultants to the table at Régent Petite France, a hotel housed in the former mills that span two arms of the Ill. In a renovated room with olive-green hues, small tables and windows offering views over the city's most picturesque district, Provençal cuisine is celebrated. The tone is set as soon as the meal begins, with the tasting of exquisite olive oil from Château d'Estoublon, into which we dip a focaccia and then a loaf of natural sourdough bread from the oven. The amuse-bouche brings us back to Alsace with Sparsbach trout topped with an emulsion of bibeleskas, an invigorating starter. We then enjoy the freshness of the sea bass ceviche, presented with class even if we are disappointed by the flavor of the lemon gel which, alas, completely overwhelms that of the Madagascar vanilla. The vitello tonnato, served generously and garnished with a rich herb salad, struck us as more balanced. Our favorite dish? The back of St. Pierre, transcended by precise cooking, albeit underlined by a sauce that tasted more like butter than reduced fish stock. As for the medaillon de veau de lait de l'Aveyron, thickly cut, it seems to have been cooked using a very well-controlled gentle technique, but it arrives almost cold at the table and garnished with shavings of foie gras, whereas we'd expect a pan-fried escalope instead. There's no mistaking the desserts, with the "Tout Vanille" made with ganache and soft Madagascar vanilla ice cream. The puffed chocolate tart is in the same vein, well finished to please aficionados. Staffed by an elegantly-dressed team, service is still in its infancy just a few weeks after opening, but needs to be stepped up. A fine wine list by the glass.
