Gourmet Restaurant Between Mers and Saint-Valery sur Somme, Ault is a charming coastal village, praised by Victor Hugo and which, out of season, evokes Simenon or a Monkey in Winter. Facing the sea, for the past eight years, La Salicorne has been attracting local gourmets and tourists in season. A skilled chef, René Centonze, whom we knew at Le Cise, sets the tone with skill and know-how, and his mackerel escabeche appetizer shows precision and taste. We regret a little that his cuisine, with its exotic choices and preparations (mackerel tataki, miso saké miel, coral scallops with sesame tea vinaigrette, ink risotto, linguine with clams...) is not closer to local products and fishermen, but the whole is well balanced and the clientele appreciates it. In the dining room, Claire, the owner, radiates efficiency, kindness, concern and good humor. Wine shop wines, a little anecdotal, with a small selection by the glass.
