A blend of two parcels of Bouzy over 50 years old, one planted with Pinot (85%) and the other with Chardonnay (15%), this cuvée is powerful on the nose. On the palate, the wine is sappy and chewy, with firm tannins. The whole is fruity and ripe, and 10 years in the cellar have not yet mellowed this champagne, which can be forgotten for a few more years and served with fillet of beef à la ficelle and spring vegetables.

Since 2008, Brigitte Beaufort has been meticulously crafting her 14 parcels spread over 4 hectares, all certified Grand Cru (Bouzy, Ambonnay and Tours-sur-Marne). The proportion of blends varies according to the harvest, to produce dense, ripe and precise microcuvées, all from the same vintage. A new step was taken in 2022: the bottles are branded with his own name, numbered, with the composition of the blend, date of disgorgement and dosage, and the initials of his children's first names (Anne-Louise and Pierre-Herbert) are now included in the name of each of his cuvées. A red Bouzy completes the range of champagnes.
