The 2007 charmed us last year. The very fine 2008 vintage, which inevitably has more aromatic complexity and breed, is equally seductive. Its balance of freshness, density and mineral tension can be enjoyed now, but we'll have to wait another 5 to 10 years for it to fully express its richness. Best served with fine dishes such as braided sole and salmon with caviar.
