This cuvée brut parcellaire magnificently combines 60% chardonnay and 40% pinot noir. The nose is tender and delicate, with aromas of mango, quince and floral honey. On the palate, the wine is full-bodied and chewy. Blackberry and fig leaf are accompanied by lovely tension and candied citrus bitters. Open with a beef wok with lemongrass and ginger.
