In 1999, Fabrice Pouillon took over the estate created by his grandfather in 1947. There, he reorganized the 7.7 ha of vines, replanting with massal selections and identifying 42 parcels. For each one, cultivation practices are now adapted according to soil analyses. Organic farming is in place, with horse-drawn ploughing, farm composting, respect for the natural rhythms of the vine and limited yields. These techniques are reinforced by the principles of regenerative agriculture, which consists of maintaining permanent plant cover, thus promoting biodiversity, increasing fertility and strengthening the vines' resistance. In the cellar, the company uses indigenous yeasts for fermentation, and four years ago created a yeast conservatory in an outdoor laboratory. Back in 2006, it launched the Méthode Fabrice Pouillon (MFP), based on indigenous yeasts, barrels and small vats, which is now applied to all its wines.
