Gault&Millau's review
Domaine de Marzilly has its origins in the heart of the village of the same name, a locality set back from Hermonville in the Saint-Thierry massif, the northernmost region of Champagne. Created by Maxime Ullens, a passionate young Belgian, the independent, family-run domaine produces champagnes of character with the greatest respect for local traditions and biodiversity. The story of the house began in 2012, when Maxime and his father acquired the ruins of Château de Marzilly. Fascinated by this 12th-century edifice, which had been abandoned for decades, they decided to restore it to its former glory and set about rebuilding it. With the help of soil analyses in the château grounds and local archives, the family discovered the details of Marzilly's winegrowing history. Inspired by the rich terroirs of the Saint-Thierry massif and traditional winemaking methods, Maxime Ullens put an end to his historic renovation business in Belgium and, with the support of his wife Anna, took up the challenge of creating a completely new operation. Thus was born Domaine de Marzilly and its Ullens champagne.
