Roaster Just across the street from the covered market, the Suau family has been roasting coffee for over a century, handing down know-how appreciated by the Albigensian population for generations. The company has modernized while retaining its artisan spirit, and today offers a range of coffees in an elegant boutique. It also offers teas from Dammann Frères. Forest coffees, in particular, are highly recommended.
