Crowned with three Gault&Millau toques for her work at Le Chantecler restaurant, Virginie Basselot is a creative chef. Originally from Deauville, the native of Normandy made a name for herself by joining the Le Negresco hotel in Nice in 2018, where she signs the menu not only for the gourmet restaurant, but also for the contemporary brasserie La Rotonde, room service, bars, N La Plage and banquets. A colossal task that requires Virginie Basselot, Meilleur Ouvrier de France 2015, to surround herself with the best producers and artisans to create her menus. Sylvie Lorne's porcelain
Virginie Basselot called on Sylvie Lorne to design some of the Chantecler 's tableware (3 toques). This porcelain specialist created the restaurant's bread baskets, for example, but also makes salad bowls, plates, bowls, teapots, mugs and cups, which you can discover in her online boutique.
Wine from Château Malherbe, Bormes-les-Mimosas
The chef at Le Negresco hotel in Nice also recommends the Château Malherbe winery in Bormes-les-Mimosas. "I particularly like their 2016 white wine. I created a recipe around this wine for sweetbreads and ceps, which goes very well with this wine. It's very gourmet."

Nery's, Fromagerie du Carré d'Or, Nice
"Nery's is a cheese dairy located just behind Le Negresco. I love their cristal de chèvre! It's a cheese I didn't know before and it's a bit like parmesan, it's really very good! We always have it on the cheese board," says the chef.

Chocolates and confectionery from Maison Auer, Nice
"This is a very fine house located in Vieux Nice. It's been handed down from father to son since 1820! It's a Living Heritage Company, like Le Negresco, so we have a lot of values in common," says Virginie Basselot. " We offer their chocolates and pralines to welcome guests in their rooms, and serve their candied fruit on our cheese platter," she adds.

Pâtisserie Julien Dugourd, Nice
Virginie Basselot's latest favorite is Pâtisserie Julien Dugourd, which the pastry chef opened in spring 2023. "We met on the motorcycle circuits and sometimes ride together. Above all, he's a very good pastry chef... I have a soft spot for his Saint-Honoré," confides the Negresco chef.
