Nicolas Paciello closes CinqSens to open a new patisserie

The pastry chef will open "Nicolas Paciello Pâtisserie" in September in Boulogne-Billancourt and Pantin. Discover his new proposal.

Four years after the launch of CinqSens, Nicolas Paciello is renewing itself. In September 2024, he will open Nicolas Paciello Pâtisserie, in place of his former stores in Boulogne and Pantin, with a new visual identity but above all a renewed, more accessible and regressive offer. The pastry chef tells us all about this renewal.

"This new brand is 100% me".

After a difficult period, Nicolas Paciello parted company with his partner at CinqSens to work hand in hand with his partner Lucille Jasmin. Since September 2023, they have been busy revamping the company to match the pastry chef's identity as closely as possible. "At CinqSens, there was a lot of my 'palace' side (the chef has worked at Le Crillon, La Réserve and Le Prince de Galles), which was great but sometimes a little cold. I needed to be more about sharing, having fun... closer to people! This new brand, Nicolas Paciello Pâtisserie, which will officially open in September, will be 100% me", he assures us.

"I'll be offering more travel cakes, with references that made me happy when I was a kid, like my mom's marbré, but also the brownie or the caramel or milk chocolate barquettes. There's also a real, regressive chocolate cake that reminds me of the one my aunt used to make every birthday. Of course, I'll be bringing my technique and know-how to the table, but I'm aiming for a more accessible spirit!"

At the opening, Nicolas Paciello will be offering his "seven capital pleasures", including marbré, but also pain au lait, tarte au citron, tarte aux fruits de saison, flan and Paris-Brest, all reinvented by him. Entremets will still be available, as well as a boxed set of travel cakes in six different flavors. You have until August 9 to take advantage of the CinqSens range, before discovering Nicolas Paciello Pâtisserie in September, at 50 boulevard Jean Jaurès in Boulogne-Billancourt, as well as at 16 rue Méhul, in Pantin!
