Franck Putelat is a real fighter. He missed out on the Bocuse d'Or in 2003 by a tiny point, but he never gave up. At the same time, he built up one of the finest tables in the South-West and took his revenge on destiny by winning an MOF title in 2018.

Between the two? This Jurassien, who trained at the Auberge de Chavanne in Courlans, then at Le Taillevent and Georges Blanc, where he held the position of executive chef, will soon be joining Carcassonne and La Barbacane, after a spell at La Bastide in Saint-Tropez. It was in the walled city that, barely a year after his installation, we noticed him and awarded him the title of Grand de Demain. He was just 30 years old, and we hailed his"cuisine as a veritable firework display, wandering through the garrigue while glancing out to sea".

In 2006, it was time for this high-flying expert to open his own restaurant. He left the medieval enclosure and its ramparts and established himself 200 meters below, at the foot of the town. His cuisine is more masterful than ever, more mature, less flashy and technically impeccable. It is also, above all, that of a cook at last at peace.
