Nicolas Paciello's first memory? His mother's chocolate marbré. So, when he told his parents at secondary school that he wanted to become a pastry chef, they sent him to Christophe Gre in Forbach, to make sure he was hooked. " I loved it. I went there every holiday and he took me on as an apprentice for five years .

A thirst for learning

After completing his CAP, mention complémentaire and BTM, his teacher sent him to Paris, to work for Fauchon. He stayed for five years. i already loved my job," he says, "but it made me even more rigorous. Just as Chef Christophe Adam was leaving the company, he heard that a position was opening up at the Crillon. Having never worked in a palace before, he took up a position as sous-chef pâtissier until the hotel closed for renovation in 2012.

Good news: Benoît Couvrand contacted him and offered to open Cyril Lignac's first patisserie. " I said to myself, 'Yet another new facet of the profession'. I signed up straight away. Then he felt the urge to return to the hotel business. That's how he got involved in the reopening of the Prince de Galles, working with Stéphanie Le Quellec. she's my mother in the business," he says, "and she taught me the basics.

Learning from the greatest names

January 2015: Jérôme Banctel calls her to open La Réserve - Le Gabriel. " I like the character, he's tough and I like that. I thought I was going to learn a lot. Once the mission was over, Nicolas Paciello took up the position of Pastry Chef at the Prince of Wales.

Three years later, while visiting Fouquet's, he met Pierre Gagnaire. " I knew I wanted to work with him ". That was to be the start of two years during which he co-created the CinqSens Paris brand. The pastry chef has since put an end to his collaborations and is now concentrating on his own brand, Nicolas Paciello Pâtisserie, launched with his partner Lucille Jasmin. " Today, all I want to do is make cakes and give people pleasure, just like when I was a kid ".
