Prestige Restaurant In what was once the home of Joël Robuchon in his heyday (with a discreet nod to the astonishing pre-dessert of potato purée, vanilla and thyme), Pascal Barbot and his indispensable accomplice Christophe Rohat revive the great hours of Le Jamin, confirming, after a difficult gestation period, that this new version of L'Astrance was well worth the one on Rue Beethoven. Alain Passard's former pupil has lost none of his talent, and has had fun shaking things up by abandoning the blind menu that made him famous and swapping it for a classic menu, thus taking the opposite view of many of his colleagues who have given in to the siren song of the "hidden-imposed". Asian influences still abound, of course (Pascal Barbot loves to work on the acidity of citrus fruits in particular), and cooking is as meticulous as ever (turbot with koji and lemon butter is a marvel of precision, as is sweetbread with wild garlic and yellow wine), and the desserts, bursting with airy freshness (the rhubarb and elderflower vacherin glacé is a highlight), confirm that our former Chef of the Year (that was just twenty years ago) still burns with the same intense fire as in his early days. The service, efficient and plentiful, is sometimes almost too familiar, and the cellar, well advised, is not only interested in the most popular appellations.
