Gourmet Restaurant With this restaurant, the Brignoles of gastronomy finally enters the 21st century. Trained by Ducasse at the Byblos in Saint-Tropez, Julien Tosello, after setting up his own business in Bordeaux and travelling extensively, has, like the salmon of the Adour, returned to the source, in the village where he was born, to offer a synthesis of all his experiences. He delivers a no-frills bistronomy where, on each plate, the product is well centered, accompanied by whatever the surrounding fields can provide, such as, this evening, beans crunching under the tooth, chickpeas in an electric hummus, and tomatoes barely candied. In the garden, the cooking is fierce, the juices precise and dense, the sensations thought through with textures, sounds in the mouth and little sparkles. A joyful guinguette atmosphere on this summer terrace.
