Gourmet Restaurant Olivier Maurin can be proud of his successors, who have made Moon a worthy heir. Nicolas Laval, who worked at William Ledeuil, and Amandine Renault, have breathed a breath of modernity into Brive-la-Gaillarde. The combinations reveal a certain audacity, with committed contrasts, such as cold braised beef in consommé, gribiche sauce, tangy vegetables and garlic croutons, market fish with peas, glazed Parisian gnocchi, pomelos and garlic confit emulsion, veal sirloin and fregola sarda risotto, sucrine/muscade emulsion, black garlic condiment and andouille jus, green and yellow kiwi tartare, fromage blanc sorbet and mousse, lime meringue, mint/lemon/vanilla gel. A good, classic cellar.
