Remarkable Restaurant The show is complete, with a view of the open kitchen and piano: at the helm is chef Ryuji Teshima and his quartet. The latter interprets French cuisine with a few Japanese touches, sublimating the products and cooking them to perfection. In the 6-course menu, zucchini, almond mousse and a thyme-rosemary-lemon infusion, followed by a risotto wrapped in cuttlefish and enhanced by a squid and horseradish jus, then cod cooked to perfection and swimming in a saffron red bell pepper sauce; then the chef serves two meats: veal fillet, vanilla golden mousseline, veal jus with yellow wine, then beef, a superb four-week matured Normandy piece and six-week matured simmental (the accompaniments are really rather skimpy), before lemon-ginger sorbet in a spice-scented tuile. Very friendly staff, including the head sommelier, Alexandre Fouquet, who gives advice on a fine cellar with numerous references.
