Gourmet Restaurant In this delightful medieval village of colorful houses, a maze of alleyways leads to the old winegrowers' house dating from the early 16th century, built on the ramparts dating from 1291. Trotthus is Philippe Aubron's home, with its rustic charm and huge beam running through the room. The chef is passionate about Japan and fusion cuisine. We sampled the €65 menu, a chawanmushi that appealed for its smooth, delicate texture, topped with edamame and shiitake. We found the marinated raw salmon a little too acidic, although it was accompanied by a fine seaweed salad. In the yakitori, the incredibly juicy poultry is confit with a sauce whose opulence is counterbalanced by the freshness of the yuzu fromage blanc. Served as a main course, the risotto, which includes shrimp and edamame, seduces with its shavings of katsuobushi (dried bonito) that move and create a magical effect. The yuzu espuma, with fresh fruit, exotic sorbet and peach juice, provides a fresh, gourmet finish. The cuisine is professional and tasty, so we'll overlook a few details in the dining room: there are no checkrooms and the glass of wine arrives already filled at the table.
