Remarkable Restaurant Thirty years on, and the house is so modern, so firmly rooted in its 2025 landscape, that it seems as if it were born yesterday. Eric Guérin was a visionary, and Gault&Millau was the first to recognize his potential by naming him Grand de Demain in 2003. Today, this one-of-a-kind table brings together and recounts a certain evolution in cuisine, better immersed in its environment, more plant-based, more natural. The appetizers testify to this, beginning with Brière (eel and split pea) and ocean (mullet brioche, oyster tempura). The foie gras from a nearby farm is truly excellent, paired with langoustine, and the two-course asparagus, whelk with chenin sauce and monette briéronne, form very coherent starters, presented with passion by a well-rehearsed and very involved team around Félix, indispensable director of these "carte blanche" menus, given to the chef and not to the guests. If, for some, the customer is reduced to a very passive role - listening, appreciating, possibly applauding this cuisine presented as "vibrant with sincerity" - it is at least as indisputable that these plates have talent, which might suggest that the discourse and the injunction to ecstasy are a little superfluous. Indeed, anyone can measure and appreciate ex nihilo the considerable and very successful work on the red mullet, the delicate hint of citrus fruit in the red mullet liver and honey sauce, as well as the pretty declension of hazelnut dessert. A large and varied wine cellar, with 300 references presented on a shelf, at the expected prices, with a wide choice by the glass.
