No less than 94 months on the lees and under cork for this late-disgorgement, non-dosed edition from a 2012 base of almost half Chardonnay and half Pinot. The nose is superb. Immediately saline, even marine at first, it reveals all its complexity after a few turns in the glass, with notes of almond, nectarine and clementine. The palate is subtly balanced. The wine's vinous side takes over your mouth before tightening to a sapid, mineral finish. Very long. Last year, we recommended a lobster curry ginger with the 739 DT. This year, for the 740 DT, we're sticking with lobster, but smothered over a wood fire.
