This September 2024, the French culinary scene is reinventing itself with a myriad of new gourmet addresses to discover. From cozy bistros to gourmet tables and innovative concepts, these new restaurants promise to delight the taste buds of food lovers. Located in the four corners of the country, from Paris to Vannes, via the Perche and Pyrénées-Orientales regions, these eight establishments stand out for their creativity, their passion for local produce, and their desire to surprise. Sauge d'Amandine Chaignot, in Réveillon
Amandine Chaignot goes green! After Pouliche (1 toque) and Café de Luce (1 toque) in Paris, the chef will inaugurate her new address, Sauge, in Réveillon, Perche, on October 5. "I fell in love with this region a few years ago, and I spend time there whenever I can. It's my green lung!" smiles the chef, who points out that the establishment will be divided into two parts. "There will be a 30-cover bistro, with a €25 lunch menu and a €45 evening menu, in the same spirit as what I'm already doing at Pouliche, with a menu that goes from €25 to €45.I'm already doing at Pouliche, with dishes to share, but also a gastronomic section which will open at the end of October," explains Amandine Chaignot. "In both cases, there will be a real focus on sourcing to showcase this very rich terroir, both in terms of market gardening and animal husbandry, but also cider, for example."

MoSugo by Mory Sacko, in Paris
After the 14ᵉ arrondissement of Paris and Galeries Lafayette Gourmet, Mory Sacko is opening a third MoSugo in the Sentier district this autumn 2024. Here, gourmets will find what has already made the first two addresses a success, namely the pretzel bun and fried chicken burger, accompanied by sweet potato fries ; chicken tenders with panko breadcrumbs and plantains; and an original recipe for chicken and waffles, topped with a maple syrup sauce! All available on site, or to take away.

Fario by Kevin de Porre, in Céret
After his success with Contraste (2 toques) in Paris, Kevin de Porre returns to his native Pyrénées-Orientales to open Fario in September 2024. Here, the chef offers a "very locavore cuisine, focusing on plant and seafood products, but also wild herbs". The thirty-something also makes a point of offering no chocolate or coffee, for a more conscious overall approach. "I found an alternative by making a blend of chicory, small spelt and roasted barley," he points out. In all, Fario will be able to accommodate around 30 diners, divided between the main dining room, a small private lounge and a patio where two orange trees and a wisteria bush grow.

Shana by Assaf Granit, Paris
Shana is the new address of Israeli chef Assaf Granit. This confidential restaurant is unpretentious and offers beautiful dishes and good wine from around the world, all served by a friendly team in a cheerful atmosphere. Enough to make your taste buds travel to Jerusalem.

Olivier Samson's Domaine du Liziec, Vannes
Olivier Samson, formerly head of La Gourmandière (3 toques), is embarking on a new adventure at Domaine du Liziec, in Vannes. The six-hectare site boasts 71 rooms, a spa and a fine range of restaurants, all of which will be managed by the chef. In addition to the brasserie and bar area, Olivier Samson offers a 35-cover gastronomic table. "You can find the DNA of my cuisine here, which defends our terroir, with iodized, tumultuous flavors, like the winds and tides. I continue to work as closely as possible with producers, between land and sea, but we also have a garden with aromatic herbs, flowers... We've also planted citrus fruits such as lemon caviar, citron, etc., and we've also planted our own orchard. It's a little nod to my career in the fine houses of the South of France", emphasizes the Breton chef.

Shin by Julien Sebbag, in Paris
Chef Julien Sebbag (Jeune Talent 2022) and pastry chef Shin Eun Jung have joined forces to open Café Shin, an original coffee shop inspired by the latter's native South Korea. Guests can discover Shin's freshly-prepared creations in an open kitchen shaped like a Hanok, a traditional Korean house.

Turbulent by Jarvis Scott, Trouville-sur-Mer
Jarvis Scott, whom the general public discovered on Top Chef and then at Matthias Marc's Liquide restaurant in Paris, is now flying solo. This fall, he inaugurates Turbulent, his first restaurant in Trouville-sur-Mer, Normandy. The young chef offers a cuisine d'auteur as well as a fine selection of wines, to be enjoyed in a 35-cover establishment spread over two floors.

Erso by Yann Placet, Paris
One of the most eagerly awaited restaurants of the 2024 season is that of Marine Bert and Yann Placet. The former, who has worked in the dining room at Brasserie Lazare, Hôtel Lutetia and Alcazar, and the latter, who has cooked alongside Anne-Sophie Pic, Guy Savoy and Akrame Benallal, open Erso ("wave") at just 30 years of age. On the menu? "Bold combinations of flavors with perfectly mastered balance, beautiful graphic plates full of color, square service, all in a bright, warm decor."

Rose's Bar extends the experience, in a relaxed atmosphere, with cocktails featuring local and floral flavors. upstairs, La Maison de Manfred has a more subdued feel, with wood and leather furnishings, warm colors, a family dining room and panoramic views over Metz. Artist Ara Starck designed 19 stained-glass windows, including a monumental one, projecting cathedral-like light across the room. French contemporary cuisine is served à la carte or on a five-course menu. The more intimate Bar de Manfred offers a selection of original cocktails, including the M+R - a combination of truffle-infused cognac and cherry - as well as a wide choice of wines. A world of its own Maison Heler was inspired by the novel La Vie minutieuse de Manfred Heler , a novel imagined by, to accompany the architectural project. It follows the character of Manfred Heler, an orphan living alone in the family home, who occupies his time by dreaming up all sorts of inventions to escape boredom. One day, the earth begins to shake and his house rises above the city. The hotel immerses visitors in this poetic universe.
