"The first name that comes to mind is François Borel, who breeds goats and makes Brousse du Rove, as well as drier cheeses. The animals are fed with what they find on the hillside, which gives a very fragrant taste to the fresh cheese. In July, he also sells goat kids, which I cook in the restaurant. It's a little-exploited meat, but one that would really benefit from being better known", says the chef of Marseille's La Femme du Boucher restaurant. "He also produces olive oil and has a few guest rooms on his estate, called La Jacourelle. It's a very bucolic place, a real favorite!"

Pigs and lambs from Ferme de Mayrinhac, Rodelle
The third address mentioned by the young chef is in Rodelle, Aveyron. "It's La Ferme de Mayrinhac. It's my pig and lamb supplier. Their pigs are of exceptional quality! I use them to make all my charcuterie. I find their fat-to-lean ratio very interesting. It's a very tender, marbled meat, with a lot of flavor. I've been working with them for many years and I've never been disappointed," assures Laëtitia Visse.

La Coutellerie Dravet, Marseille

"They make table knives and kitchen knives, and what I think is great is that you can ask them for custom-made knives.
