Anthony BAUD
Chef : 2 restaurantsAt secondary school, his teachers would certainly not have bet on him; and yet, Anthony Baud is shining brightly in the Lyon region and beyond!
Unmotivated by a general curriculum, Anthony Baud revealed himself at the Lycée Hôtelier François Rabelais, in Dardilly, near Lyon. In 2008, he apprenticed at Le Caro restaurant in Lyon, working alongside Sébastien Pommier. "Hegaveme what it takes.I spent the best years of my lifethere, as an employee," he recounts.
After a stint with Christian Têtedoie and a number of other establishments in the region, the courageous 19-year-old took the plunge into the world of gastronomy and founded the Saxe restaurant, a small bistro nestled in the 3rd arrondissement of the city of the Gones. "My familyhelpedme.My mother did the service, but I was on my own in the kitchen for three years." Working only at lunchtime, the young chef sublimated fresh produce and began to make a name for himself in the neighborhood. In 2016, on the strength of this success, the 26-year-old opened La Quintessence, in the 1st arrondissement, a more gastronomic address. Here, he champions an innovative cuisine that reflects his audacity, rewarded with 2 toques at Gault&Millau in 2018.
In 2023, Anthony Baud continued his conquest of the Gaul capital by opening a new bistro, Maison Baud, a wine and spirits bar focused on sharing. The entrepreneurial chef wanted to carve out a fine reputation for himself in the region, and now he has done just that!
