Chef's Restaurant We've been following Mathieu Moity for a good ten years now, and this young Basque chef still has plenty to offer. From his experiences in Paris (where he won the Gault&Millau prize in 2016) to his return to the Basque country, he has shown consistency and talent with simplicity and commitment. His trademark is to showcase his region and its resources through inspired, open and accessible cuisine. Inventive starters on traditional bases, dishes in two formats to suit appetite and budget: vol-au-vent de txangurro turnip boule d'or carrot timut and bisque, confit veal breast asparagus olive celery, roast octopus cauliflower broccoli ink tandoori spices... Finish with rice pudding and rhubarb tartlet ganache white chocolate green tea, accompanied by a well-stocked cellar of regional wines.
