Chef's Restaurant It's impossible not to acknowledge the decisive influence of the setting on the overall experience, so distinctive and thought-provoking is it. This early 19th-century folly, perfectly maintained, captures the richness and imagination of the time, a magnificent château nestled in three hectares of parkland in the heart of the Saint-Émilion vineyards. The 5* hotel is not short of services (swimming pool, spa, fitness room, whirlpool...), right down to the gourmet table and its exceptional Moorish décor, with stained glass windows, pilasters, arabesques and oriental paintings, antique moldings and gilding. Chef Quentin Merlet's cuisine is serious and well-sourced, with a market menu at lunchtime and large menus in the evening, starting at €70. Highlights include foie gras de canard landais, peaches and Vietnamese pepper, maigre with eggplant caviar and saffron broth, cold-smoked duck breast, corn cake and apricot with rosemary, and an exotic version of cannelé with passion fruit and jivara chocolate. Nice cellar.
