Chef's Restaurant It became essential to put the spotlight back on this inspired chef, who was once Grand de Demain at his restaurant in Pouilly le Fort, near Paris. Having moved to the English Channel some ten years ago to return to his native region, Anthony Vallette reminds his regulars that he is as creative as he is skilful, even if today he favours the sincerity and powerful flavour of a natural product. And even if there aren't many dishes to choose from, depending on what's arrived or what's been farmed, every idea is worth taking advantage of: foie gras petit pois fraise, lobster snacké fenouil cacao, the catch of the day, chocolate passion curry for dessert. The place is elegant, the Marché menu always tempting, in the same eco-responsible approach.
