Chef's Restaurant It's an understatement to say that Guillaume Sanchez's cuisine is personal and, in a way, unique. The chef twists time and space, goes back to the origins of the product, plays with fermentations to extract the quintessence, giving an often complex but not devoid of interest range of always original creations. He can always give an overview of his work, seven or eight dishes from which he makes two menus, in four and seven times; but the essential happens on the plate, between the taster and the cook: hazelnut and Jerusalem artichoke scallops, kimchi and American red mullet, duckling and sea urchin (in the evening, the duckling gives way to the pigeon), chocolate at lunchtime, citrus fruits in the evening... Nothing here is insignificant, which makes the experience precious, and the atmosphere, always in the right tone, helps.
