Remarkable Restaurant A major institution for over fifty years, the Relais des Coussau is the epitome of a model stopover in the Pays de Cocagne. As a 4* hotel, Relais & Châteaux, gourmet restaurant and inn, the Relais des Coussau brings to life the art of French hospitality, with a full staff in full dress, solemnly laid tables and refined traditional cuisine. Over the years, this major Landes restaurant has become gentrified, but the pleasure is still there: lobster and coral salad, blue apples, samphire and Magescq asparagus, sautéed golden lobster civet, fricassee of white and green asparagus, lemon cream and jerez press juice, sole with porcini mushrooms, roasted veal sweetbreads steamed with fresh morels, roast suckling lamb with pink garlic, French peas and garlic jus, traditional Grand Marnier soufflé. Exceptional cellar.
