Remarkable Restaurant The childishness of the façade (I hide everything, I say nothing, it's a mystery and a surprise) should not discourage goodwill: Guillaume Leclère really does have talent, and proves it with each of our visits. It's a true moment of gastronomy, with its research into tastes and combinations, and in-depth work on each plate. After the fine appetizers, including the crispy red tuna, a superb seasonal starter with green asparagus, horseradish mousse and fresh mint sorbet, the harmony and delicacy of the cuttlefish tagliatelle, accompanied by a fallée of early leek, a crispy egg yolk with cuttlefish ink and leek oil, the mastery of cooking on the rosemary-crusted maigre on its little head and bone jus; accompanied by a fine tartlet of fresh peas with sabayon and Colonnata bacon. Less enthusiasm for the artichoke, which accompanies a perfect veal roll, and very successful desserts (strawberry fennel elderberry, and especially the chocolate mille-feuille meringue fleur de sel and coffee). The wine cellar is presented on shelves, with wines by the glass at €9 suggested by the sommelier.
