Chef's Restaurant It took a lustre, no more, for Coline Faulquier to take her rightful place in the Marseilles landscape, and fill her little hidden room at the end of the long Rue du Rouet, off the beaten track. Her work, her talent and her ability to adapt to the accepted codes of the gastronomic table have convinced the discerning Marseillais. She's not part of a "cool and modern" trend like some of her colleagues of the same generation, but her path is well mapped out and her success proves it. There's no à la carte menu, and only a few dishes on the circuit, divided into progressive menus according to the number of services, and published. The tables are a little close together and the setting quite simple, leaving plenty of time to enjoy the beautiful variation on onion starter and the freshly pressed prawns with clementine aromas, measured out just right. Careful attention is paid to the products, which come from selected suppliers, such as the arrival of Matthieu Chapel's regular fisherman (the celery beurre blanc muge the other day), and the rustic allusions, such as this evocation of rabbit with mustard (chard and flaked chard, full-bodied jus, lonzo emulsion), are well executed. The citrus dessert is pleasant and appropriate for the winter season, and the cellar is classic and not very curious, with sure values in many regions (Eric Nicolas and a vertical of Coulée de Serrant in the Loire, for example) and standard wines from Provence, which is rather under-represented.
