Remarkable Restaurant You'll have to reserve your place at the counter to admire the precision of the gestures of this twirling Kyoto-ite, trained in the ancestral Japanese technique of Kaiseki, which emphasizes the seasonality and freshness of local produce, as evidenced by the portraits of his suppliers that cover one wall of his kitchen. Ippei Uemura is a playful illusionist and a virtuoso who chisels his dishes with color, fragrance and taste. We hardly dare to tamper with these works of art. In one of his menus, "le rêve", charcoal-grilled red mullet, baby vegetables and mackerel mousse with cocoa, sea bass sashimi on a carpet of vegetable vinaigrette. Breaded Tamaris oysters, marinated fried squid and this incredible tuna tartare with its melt-in-the-mouth texture due to flesh scraped with a shell to prevent oxidation. A wink: a saké yuzu confit granita, like a trou normand, precedes the Arai-style saint-pierre, marinated in seawater then charcoal-grilled, with seaweed jam, fried Jerusalem artichoke and oyster mushroom and shitake velouté, all presented in a crispy sweet potato filet. And we were blown away by an astonishing dessert combining crunchy carrot tops, honey, tonka bean and yuzu juice in a sugar cone. The dream lives up to its name!
