Gault&Millau Academy's member With his head full of projects (a new sister restaurant is on the drawing board in Ribeauvillé, in addition to the Strasbourg brasserie), Marc Haeberlin never has time to get bored. While looking after the great Illhaeusern institution like a good father, he never stops thinking about cuisine and the pleasure of entertaining, delivering with all his teams what he masters best: excellence on a daily basis. From Switzerland, Germany, Luxembourg and Belgium, they all flock to this house in bloom, where the River Ill babbles, to take part in the most beautiful traditional Alsatian festival there is. Seasonal ideas are combined with classics from every era: salmon soufflé, of course, but also "boîte de sardines" with osciètre caviar, frog mousseline and spit-roasted Miéral poultry with truffle baeckeoffe, all timeless marvels, joined this year by lobster and celery remoulade mille-feuille with green apple, roasted turbot crisp with porcini mushrooms, wagyu beef and stuffed dampfnudel... Those who arrived with pursed lips unbutton a few belt loops to express their joie de vivre, Serge Dubs and his sommeliers accompany the agapes with an unrivalled Alsatian cellar that proves just as delightful on all the great vineyards, and we savor without counting time or anything else up to the delicious and numerous desserts, the Ghana chocolate and mucilage sorbet, the apple cake tatin cinnamon ice cream, the crêpes flambées filled with morello cherries.
