Chef's Restaurant With a breathtaking view over the Arcachon Basin, the Auberge of the same name reopened its doors at the end of June, with a change of owner for a temporary season prior to renovations. Mélanie Serre, Grande de Demain last year for Elsa in Monaco, was eagerly awaited. For this relaunch, she came up with two concepts: a formula of small plates to share, with original and friendly suggestions in the evening, and a unique menu with no choice at lunchtime, renewed daily, plus a table d'hôte formula for 6 to 8 guests. There's no doubting the young woman's talent for offering up a cuisine that's fun, contemporary and tasty, based on familiar ingredients: the excellent leek maki with nori, lemon emulsion and candied ginger, the excellent and fresh ceviche of sea bream, nectarines, red onions and coconut milk with fresh herbs, the lobster roll in a soft brioche, with turmeric mayonnaise, and the peanut and salted butter caramel snickers tart. A complete, varied cellar covering all the regions, naturally rather high overall prices, dedicated and efficient young service, under the supervision of Bertrand Guillou-Valentin, Mélanie's companion, whom we had already met at Louis Vins.
