Produced from a parcel-by-parcel selection of 45-year-old vines in Aÿ's Grands Crus Classés, this 100% Pinot Noir is a brilliant golden color. The nose is powerful and vinous, with primary aromas of fresh blackcurrant, white peach and honeyed candied citrus. The palate is full and homogeneous, with fleshy chewiness and an invigorating, spicy finish. This is a champagne for connoisseurs, to be served as an aperitif, with a carpaccio of sea bream, or with Cancale N°2 oysters.
