Charles Coulombeau in gastronomic residence in Reims for a year
The chef from La Maison dans le Parc (Nancy) has designed the menu for Polychrome, a restaurant hosting chefs in residence in Reims, in collaboration with Maison Taittinger.
Charles Coulombeau settles in Reims for an unprecedented year-long culinary residency. In collaboration with champagne house Taittinger, he created Polychrome, a table where color, emotion and effervescence meet.
A new adventure for a chef on the move
After conquering Nancy with La Maison dans le Parc (3 toques) and Metz with Yozora (1 toque), Charles Coulombeau continues his ambitious trajectory. from June 14, 2025, he will take up residence in Reims for an unprecedented project: a one-year gastronomic residency in the very heart of the cellars of the prestigious Taittinger champagne house.
The fruit of a dialogue begun two years ago between the chef and the champagne house, Polychrome aims to offer visitors an immersive culinary experience, conceived as a tribute to the savoir-faire of champagne... and to the freedom of a chef.
Polychrome: a kitchen in color
The Polychrome concept is as poetic as it is daring: each dish will be built around a dominant color, playing on textures, flavors and visual tonalities. But the experience doesn't stop there: separate condiments, sauces and spices will be offered to enable diners to compose their own plate, in the manner of an oenological assemblage.
This playful, participatory approach directly evokes the work of blending grape varieties at Taittinger. Each meal becomes a sensory playground, a dialogue between the cuisine and the vintages.
A restaurant in residence, a house in motion
With this project, Taittinger is inaugurating a new dynamic around its gastronomy. Polychrome will be the first chapter in a table-in-residence format, destined to evolve: each year, a new chef will come and cast his or her eye over the world of champagne, to offer a personal, seasonal interpretation. So don't delay! You'll have just one year to discover Charles Coulombeau's signature.
