Julien Dumas takes over Pergolèse and opens his own bistronomic restaurant

Julien Dumas, Gault&Millau d'or 2023, takes the next step: on March 10, 2025 he will open Maison Lagure in La Garenne-Colombes, his very first restaurant, before taking over Pergolèse in Paris.

From the Rech to the Saint-James, via the Lucas Carton, Julien Dumas has established himself as one of the most committed chefs of his generation. Trained under Jean-François Piège and Jacques Maximin, he has developed a cuisine inspired by the sea and wild produce. After earning a 4ᵉ toque at the Saint-James restaurant Bellefeuille, he is preparing to open a new chapter: on March 10, 2025, he will inaugurate Maison Lagure, a bistronomic table in La Garenne-Colombes. At the same time, he will take the helm of an emblematic address in the 16ᵉ arrondissement of Paris: Le Pergolèse.

Maison Lagure, a first bistronomic address

The first restaurant to bear his name, Maison Lagure embodies a warm, accessible vision of gastronomy. Located in La Garenne-Colombes, it will feature seafood products, with lunch menus priced at around 40 euros and half-dish or tasting dinners at around 80 euros.

Large table d'hôte, open kitchen, wine library: everything is designed for a convivial experience. On the restaurant's Instagram page, Julien Dumas shares behind-the-scenes details of this adventure with his subscribers: progress on the work, recipe testing and strolls through the city market. "Good wine, good food, a great atmosphere, just like home," he sums up. at his side, Lucas Boisseau, who followed him from Lucas Carton to Saint-James, will assist him on this new project. The restaurant's name, Lagure, refers to a plant that fixes the dunes, a nod to the chef's roots and his attachment to nature. Studio Ambiant has created a warm and inviting setting, with wood, sand and khaki tones and natural materials echoing the restaurant's cuisine. Opening planned for March 10, 2025.

A second challenge with Le Pergolèse

On March 17, 2025, Julien Dumas will take over the reins of Le Pergolèse, a gourmet restaurant in the 16ᵉ arrondissement of Paris. Renamed Zostera, in reference to a marine plant essential to coastal ecosystems, the restaurant will carry his signature: cuisine focused on foraging and wild produce, respect for the terroir and marine influences.

Stéphane Gaborieau, MOF chef, left his mark on the restaurant with his exacting standards and commitment to the product. Julien Dumas intends to build on this philosophy, while adding his own personal touch, in line with his work at Saint-James. Slight renovations by Studio Ambiant will subtly adapt the space without altering its DNA. A project that respects the past, while affirming a forward-looking vision. The chef is also planning to create a vegetable garden in the Yvelines to supply his restaurant with seasonal herbs and vegetables.

With Maison Lagure and Zostera, Julien Dumas has anchored his first two addresses in the same commitment: product-based cuisine in close contact with nature.
