Chef's Restaurant The ramparts and noble granite buildings, and their relative austerity, are matched by the lightness and seaside colors of this house where simplicity and elegance go hand in hand. There's a "brasserie" feel to the place, in terms of the number of covers, the steady pace of the meal, the liveliness of the waiters and their complicity with customers. The dishes, however, take a slightly different approach, underlining Ronan Mahé's talent and sense of clever cooking that keeps you on your toes right through to dessert. The combination of perfect egg, morel mushroom, asparagus and spinach may not be revolutionary, but it hits the sweet spot. The saint-pierre takes things to another level, with delicious leek tortellini and controlled acidity (lemon, vinaigrette). As for the crème diplomate, it plays the role of unctuous ambassador for a poached apple, made irresistible by a runny salted butter caramel added at the last minute. While the wine list does not claim to be exhaustive, it does meet our customers' expectations, with good references, mostly organic: cheverny from domaine Sauger; saumur-champigny from C. et P. Rétif; valençay from domaine JF Roy; savennières from la Roche aux Moines; muscadet from domaine Lieubeau... Finally, let's not forget to salute Solène Mahé, who lights up the service. Prices soar in the evening, with two menus at €82 and €105 and virtually no choice.
