Chef's Restaurant The people of Brioch are both proud of their beloved Vieille Tour and have been loyal to Nicolas Adam's cuisine for ages. Refined and even a little precious against a backdrop of tradition, it fits into this simple, sober and elegant setting on the second floor above the little port of Le Légué. With the passing of time, the choice has been narrowed down to three starters and three main courses on a menu-card: the warm foie gras with langoustine slivers, raw celery and poultry broth is pleasant. The chef knows how to fish, and the brill is cooked with precision, an imposing, multi-accompanied slab of asparagus, risotto, portobello, watercress jus and asparagus foam before the lemon sorbet yogurt yuzu dessert, madeleine with lemon olive oil. The local and seasonal products are of good quality; we would have expected a little more regional involvement, with a wider choice of cider and beer, a butter other than Bordier's... On the other hand, the bread from a nearby bakery in Le Légué is excellent. Service is diligent, and the wine cellar is rather knowledgeable, but in trying to cover all the regions, it turns out to be a little thin everywhere. First-price selection around €40, wines by the glass suggested orally by the maître d'hôtel sommelier.
