Chef's Restaurant Taken over in 2015 by Aurélien and Camille Mérot, the famous house is now enjoying a second youth under the impetus of this couple of excellent professionals. Having worked in Philippe Labbé's kitchens (during the Chèvre d'Or period), Aurélien Mérot has his back to first-rate products and tried-and-tested recipes: pollack pulp and steamed young fennel with sea urchin butter emulsion, Bresse poultry with albufera sauce, roasted celery and truffle strips, before a well-executed dessert of Alunga chocolate and Namelaka cream. In the cellar, some fine references from the region.
