Prestige Restaurant In the fifteen years since he took control of the kitchens from his father, Frédéric Doucet has had only one idea in mind, out of loyalty and gratitude, to make this house that saw him grow even bigger. Today's four toques are not a culmination, but a further step. For this imposing Burgundy inn on the banks of the Arconce, renovated in a contemporary spirit, with a vast hotel across the street, has indeed become one of Burgundy's modern-day beacons, thanks to his determination and energy, while retaining a provincial and family dimension that is not a shortcoming. Here's a chef who's proud of his region, and who showcases it with even greater finesse and inventiveness, through some brilliant dishes: a memorable beef consommé with razor clams and sea lettuce, a superb raw-cooked trout from Crisenon, with a delicate yet very present verbena sauce, a saffron coulis with Loire pike-perch, and a fine presentation of Charolais beef, well deserving of this leading role, zucchini flower and tarragon sabayon. Burgundian meals can sometimes be heavy, but here, lightness accompanies greed (and let's not forget the very successful waltz of appetizers), leaving you in top form for the alfalfa soufflé and Morvan cazette, hay ice cream, a final tribute to the riches and productions of the region. A well-balanced cellar, logically favoring Burgundies from the South, for their excellent value, offering great keels as well as a wide choice at a small price, around €50.
