Chef's Restaurant When you have the personality and know-how, it's easy to make your mark in just a few years, to have a recognizable and recognized signature. Such is the case with Mathieu Rostaing-Tayard, whose restaurant in Biarritz undeniably stands out, with its blend of chic and casual, where everything seems simple and at the same time the culmination of a lengthy process. There's a fine menu at the counter, where you can devour competition tapas, stuffed mussels from Groix with seaweed butter and chilli, oxtail croquettes with riojana, star anise ice cream and Meyer lemon granita... Then there's the restaurant, with its five- or seven-course menus featuring smoked mackerel, crist marine and pepper oil, dry fish à la béarnaise, heliantis, buckwheat, juniper, seaweed and ventrèche, and confit saint-pierre with braised Brussels sprouts, bergamot leaf butter and lovage, a beautiful matured Soule lamb, smoked beet, chioggia, red wine sauce and pimenton de la Vera, a cocoa, chestnut and black cardamom dessert. A strong, well-recommended cellar. At the beginning of October 2024, we learn that Mathieu Rostaing-Tayard is leaving the walls of his restaurant to Aurélien Largeau.
