Gourmet Restaurant Manon in the kitchen and Antoine in the dining room met at the George V, in the days of Éric Briffard, and both have since moved from establishment to establishment. For Manon, Lasserre and Semilla; for Antoine, Ledoyen, Taillevent, Peninsula... Since November 2022, they have been at the helm of Bonnotte, a nod to the famous potato from the island of Noirmoutier. In a room with white walls, parquet flooring and light wood tables, Manon offers a bistronomic cuisine with, for lunch, a small €38 menu with a strong focus on vegetables, which attracts Boulonnais, but shows an almost unexpected simplicity. For dinner, there's a change of direction, with more gourmet and more expensive dishes: raw bluefin tuna, green apple, dill, special n°2 oysters; monkfish, caramelized endive, zéphir soubise, passion-fruit tarragon virgin; veal sweetbreads, roasted leeks, sorrel, melting onions, herbaceous blanquette sauce. In the dining room, Antoine takes orders and comments on his wine list, which is fairly classic overall. Service is relaxed and friendly. A promising first toque.
