Remarkable Restaurant The precise, solid cuisine of François Sauvêtre, a discreet chef full of sensitivity, shows a fine evolution. Now owner of the premises, he now excels in total freedom, at the service of Bordeaux epicureans who know the address well. Straightforward flavors, precision and gourmandise, juices to be sautéed to the last drop (diver's abalone, parsnip, black garlic, pollen and Sturia caviar, poultry jus infused with abalone bards, heliantis mango St. Pierre, watercress, Jean-Christophe Dulau's pigeon, macadamia and truffle). And the dessert is just as delightful, in perfect continuity and harmony. Well-stocked cellar, smooth, elegant service.
