Chef's Restaurant A table in a pocket handkerchief that nevertheless thinks big, with its two-toque plates for twelve place settings. Indeed, Grégory Ménard and Lucile Voisin are far from beginners, she having studied at the Ferrandi school and he at Choko Ona, where they first met. From Espelette to Cambo-les-Bains, the couple have built up a contemporary and lively vision of gastronomy, playing with textures and contrasts with ease, sometimes crisp, sometimes melting, spicy or sweet, acidic or round; in short, playful compositions that cleverly promote the Basque terroir. The clay tone of the small room underlines the good taste of the house, a pastel and vintage spirit of beautiful purity, foreshadowing the careful aesthetics of the plates, on poultry in breadcrumbs, mayonnaise and spices, chicory pickles, polenta and yassa spices, creamy bacon jus, barbecued veal, remoulade and celery risotto, a delicious mont blanc cacao, vanilla mascarpone cream and hazelnut praline, rum ice cream, flirting with three toques. The cellar, admittedly short, shows good intuition (Élodie Balme, Vincent Cluzel, Les Pothiers, Bordaxuria etc.).
