This cuvée is vinified half in barrels, half in vats, from the only pinot meunier planted in the village of Ludes. Notes of stewed mirabelle plum, juicy apricot, rhubarb jam and toasted hazelnuts combine with intense but restrained bubbles. A slender, savory frame, sapid and taut thanks to the absence of malolactic fermentation, pure and salivating, distills notes of almond and pear. Pair with steamed young leeks, kiwi and smoked oysters.

The grapes of Pinot Noir, Pinot Meunier and Chardonnay are coming from Chigny-les-Roses, Rilly-la-Montagne and Ludes (Premier Cru). Patrice Tixier is in favour of ageing his vintage cuvées six years in the cellar, and 3 years for the rest of production. The estate is certified HVE and Sustainable Viticulture in Champagne.
