This solar truffle wine has a brilliant old gold color with lovely reflections. The nose offers an exotic blend of stewed, honeyed fruit, vine peach, Williams pear and bitter orange zest. These notes are echoed on the palate with an elegant chewiness, but the wine needs aeration to fully express itself. Serve as an aperitif or with braised sweetbreads and autumn mushroom méli-mélo.

This cooperative, founded in 1929, is unique in that it only accepts grapes from the Mailly grand cru (where the chardonnays pinot and the pinots chardonnent), in the heart of the Reims mountains, from some 70 ha. All cuvées are grand cru. The champagnes are generally full-bodied and dense, with excellent definition of fruit. Undoubtedly the best cooperative winery in the region, this house is committed to an interesting parcel-based approach, with some 35 lieux-dits. On-site tastings are available.
