Often accompanied by a good gravy, this recipe has stood the test of time, and generally appeals to the whole family, from the youngest to the oldest. So where can you enjoy a good sausage-purée in a restaurant? Here are five addresses across France that are sure to delight.

Graille, in Rennes

Graille is a great neighborhood restaurant on Boulevard de Verdun in Rennes. The specialty of this bistro is sausage-purée, entirely homemade. At lunchtime, it's served by the plate, while in the evening, the sausage is shared with the whole table! The creamy purée is topped with a jus and mustard seed pickles for the perfect combo.

La Femme du Boucher, Marseille

With her passion for charcuterie, Laëtitia Visse opened her restaurant La Femme du Boucher (2 toques) in Marseille in 2020. Here, you can feast on dishes like pork pate, calf's head with gribiche sauce, pork terrine and the famous pureed sausage. There's no doubt about it, the young chef is bringing traditional butchery up to date!

Lazare, Paris

Located on the forecourt of the Saint-Lazare train station, Lazare is a cosy brasserie with a menu designed by Eric Frechon. The cuisine here is family-style, traditional and always well executed, like the chef's now-famous sausage-purée, considered one of the best in Paris.

At Mallard (1 toque), the menu is short and the cuisine simple. When you think "saucisse-purée" in Paris, you inevitably think of Les Arlots (1 toque). In this cheerful setting, where the welcome is always impeccable, you can feast on matured onglet de bœuf, brandade de morue or tripe à la romaine, but above all the unmissable Arlots sausage served with a mousseline of charlottes.
